Terrapin Pumpkinfest Spicy Crab Bisque with Salted Caramel Crusted Beer Bread

Fall. I love fall. Pumpkin everything. My version of Thanksgiving comes around – “Hanksgiving”. And, Terrapin Pumpkinfest. This beer looks and smells like pumpkin. As it should, since it’s made with real pumpkin! You can smell the spices of fall; nutmeg, cinnamon, and ginger, as well as hints of caramel and graham crackers. It’s truly a beer that makes you visualize everything great about the fall. Once you taste Terrapin Pumpkinfest Spicy Crab Bisque, you’ll feel the same. I’ve incorporated all those beautiful fall flavors in this off the charts bisque. Paired with the Terrapin Pumpkinfest Salted Caramel Crusted Beer Bread, your tummy will be very happy. In fact, I’d say you’ll “fall” for it!

Ingredients

4 Tbs butter

½ cup finely chopped shallots

½ cup finely chopped onion

4 cloves garlic

1 tsp fresh grated ginger

½ tsp kosher or sea salt

½ tsp ground nutmeg

¼ tsp ground cinnamon

¼ tsp fresh ground black pepper

¼ tsp cayenne pepper

1/8 tsp ground cloves

1 ½ cups chicken broth

1 ½ cups seafood stock

12 oz Terrapin Pumpkinfest

2 (15oz) cans pumpkin puree

1 cup heavy cream or half & half

½ lb lump crab meat

1 cup shredded smoked gouda

Sour cream or plain Greek yogurt for garnish

Chopped parsley for garnish

Directions

In dutch oven, melt butter over medium heat. Add shallots, onions, garlic, & ginger until tender, stirring occasionally. Lower heat to medium low, add next 7 ingredients, cook for 2 minutes. Add broth & Terrapin Pumpkinfest. Bring to just to a boil; reduce heat. Add pumpkin & heavy cream. Simmer, uncovered, for 15 minutes, stirring occasionally. Allow to cool slightly; blend soup using an immersion blender (you can use a stand blender, but allow to cool longer). Return to heat & add cheese & crab. Garnish with sour cream or Greek yogurt, & parsley.

Terrapin Pumpkinfest Salted Caramel Crusted Beer Bread pairs well with any hearty bisque, soup, or stew, but it pairs oh so well with the Terrapin Pumpkinfest Spicy Crab Bisque!

Ingredients

12 oz Terrapin Pumpkinfest

¼ cup water

2 Tbs vegetable or olive oil

2 cups all purpose flour

1 ½ cups whole wheat flour

2 Tbs sugar

1 ¾ tsp salt

1 ½ tsp active dry yeast

Directions

In stand mixer with paddle attachment, add half the flour and rest of ingredients, and mix for 3 minutes on medium speed.

Change attachment to dough hook, gradually adding remaining flour until dough is firm (you may need additional flour or less flour).

Knead on floured surface for 5 minutes.

Place dough in lightly oiled bowl, turning so all the dough is covered with oil, cover with towel& allow to rise until doubled.

Turn onto flat surface, punching out bubbles. Flatten into large rectangle, and tightly roll up from shorter side. Pinch to seal ends & seam.

Place seam, side down on oiled, lightly dusted with cornmeal, cookie sheet. Makes cuts across top of loaf. Let rise until poking it leaves and indentation.

Brush with melted butter and salted caramel sauce. Bake in preheated 375 oven 20 minutes. Remove & lightly brush with our salted caramel sauce. Return to oven for 10 – 20 more minutes.

This is a very simple recipe for a salted caramel sauce. There’s never a reason to be without homemade caramel sauce!

Ingredients

¾ cup packed light brown sugar

1/3 cup heavy cream

4 Tbs butter

1 tsp vanilla

2 tsp salt

 

Directions

Combine sugar, cream, & butter in heavy saucepan over medium heat. Bring just to a boil, reduce heat to med high, and add vanilla and salt. Heat and stir until salt is dissolved. Remove from heat.
