Small Town Brewery Not Your Father’s Root Beer Float Cake

I grew up loving root beer. What kid didn’t? While I rarely drink it these days, every once in a while, it’s a little piece of nostalgia that I greatly enjoy. And, well, a little piece of nostalgia is exactly what Small Town Brewery excels at creating.  Small Town Brewery Not Your Father’s Root Beer tastes just like root beer, all while boasting a 5.9% ABV (trust me, you’ll want a case of this!). I thought about my favorite treat as a child; a root beer float. How do I make magic happen with the two? Small Town Brewery Not Your Father’s Root Beer Float Cake, of course! The cake, like Small Town Brewery Not Your Father’s Root Beer, gives the touch of nostalgia, without all the sugary sweetness (there’s some, don’t get me wrong!). The cake is light and tasty, not too sweet, and the perfect complement to this flavorsome ale.

If you LOVE root beer, you’ll not only love Not Your Father’s Root Beer Float Cake, you’ll love the beer! It’s moist and VERY delicious. I know you’d think I’m a big dessert eater, but I don’t eat a ton of it. I love to taste, but I’m not the “sit down and eat a bag of cookies” type. This cake? I wanted to eat every bit of it. EVERY bite. Every bit.

Ingredients

Cake Ingredients

1 cup butter, softened

1 ¾ cups sugar

2 Tbs vanilla

4 eggs, room temperature

1 vanilla bean, caviar scraped out

2 ½ cups flour

2 Tbs baking powder

¾ tsp salt

1¼ cups buttermilk

1/3 cup Not Your Father’s Root Beer

 

Frosting Ingredients

1 cup butter, softened

3 cups powdered sugar

2 tsp vanilla

2 Tbs heavy cream

1/3 cup Not Your Father’s Root Beer

Directions

In large bowl, beat butter until fluffy. Beat in sugar. Stir in vanilla. Add eggs, mixing in one at a time. Mix in vanilla bean caviar. In separate bowl, combine flour, baking powder, & salt. Mix in flour mixture & buttermilk alternately, in 3 batches, until combined. Add Not Your Father’s Root Beer, mixing just until combined. Butter & flour two 9” cake pans. Line bottoms with parchment paper. Pour mixture evenly into the two pans. Bake at 325 for 30 to 35 minutes, or until a toothpick inserted comes out clean. Cool in pan for 20 minutes on rack; then turn cakes out onto rack to finish cooling. Frost with Not Your Father’s Root Beer frosting.

Frosting: In large bowl, beat butter until fluffy. Beat in powdered sugar. Beat in vanilla & heavy cream. Add Not Your Father’s Root Beer, beating just until combined.
