New Belgium Brewing Sunshine Wheat Salmon and Cabbage Salad

Ingredients

4 – 4 ounce pieces salmon
6 oz New Belgium Brewing Sunshine Wheat Beer
½ tbs butter
2 slices bacon, chopped
¼ cup finely chopped red onion
2 tbs chopped cilantro
2 tsp orange zest

Directions

To poach salmon, sauté butter, bacon & onion in large skillet until bacon is cooked, not crispy. Add beer, cilantro and orange zest. Add salmon, skin side down and cover for 4 to 5 minutes. Turn salmon and poach for 4 to 5 minutes.

I serve this cabbage with the New Belgium Brewing Sunshine Wheat Salmon. It’s the perfect accompaniment for the salmon.

Ingredients

1/3 cup dried cherries
2 tbs cider vinegar
4 tbs + 2 tbs  New Belgium Brewing Sunshine Wheat Beer
2 tsp orange zest
6 slices bacon, chopped
2 tbs finely chopped shallots
1 tbs chopped cilantro
1 tsp grapeseed or olive oil
½ tsp salt & ground pepper
3 cups each shredded green & purple cabbage
½ cup toasted, slivered almonds
2 oranges, segmented

Directions

Simmer cherries, vinegar, orange zest and 4 tbs of beer. In another skillet, sauté bacon until almost crisp. Add shallots and cook until bacon is slightly crisp. Deglaze with 2 tbs beer. Add cilantro, oil and salt & pepper. Add cherry mixture. In large bowl, toss with remaining ingredients.  Plate cabbage salad with salmon (remove skin before serving) on top.
