Crispin Natural Hard Apple Cider & Maple Glazed Chicken with Crispin Natural Hard Apple Cider Squash & Potato Hash

Cider, cider everywhere, but which one do we drink? Some ciders are really sweet and literally taste like you just bit into an apple.  Some are mild, with just a hint of apple aroma. Some are not sweet at all, and quite bubbly.  Yes, literally every hard cider is different (and they are all gluten free!). Like wine and beer, they have a very distinct personality.  I created this recipe to complement Crispin Natural Hard Apple Cider, a beautiful, all natural artisanal cider that tastes like the aroma of apples being cut. You know when grandma is cutting apples to make her amazing apple pie?  It has a little bit of tartness at the end, which is a fabtastic taste buddy to the maple in the glaze for the chicken.  Create this little beauty of a meal, serve your cider in a stemmed glass, light a candle and a fire in the fireplace and savor the moment.

Ingredients

4 Bone in chicken breast halves, skin on

Salt & Pepper

2 Tbs grapeseed oil

2 Tbs butter

1 cup Crispin Natural Hard Apple Cider

½ cup real maple syrup

½ cup chicken broth

1/8 tsp ground cinnamon

Directions

Liberally sprinkle salt & pepper on outside of, and underneath, chicken skin. Heat oil in large oven proof skillet. Place chicken, skin side down, in skillet and cook about 5 minutes, or until skin browns.  Turn chicken over, place skillet in preheated 425 oven until chicken is cooked through, about 15 minutes. Transfer chicken to serving dish and add butter. When melted, add remaining ingredients.  Bring to a boil and reduce until it’s approximately one cup. Pour over chicken.

Ingredients

2 cups cubed butternut squash

1 cup cubed pumpkin (or other winter squash)

1 cup cubed potato

1 cup cubed apples (small cubes)

1 cup of shallots, cut into wedges

¼ cup Crispin Natural Hard Apple Cider

½ cup chopped pecans

2 Tbs melted butter

1 Tbs grapeseed oil

1 Tbs light brown sugar

½ tsp kosher salt

¼ tsp ground ginger

¼ tsp fresh ground black pepper

Directions

Place vegetables in greased baking dish in a single layer, but tight. In bowl, whisk remaining ingredients (except pecans) until blended. Add pecans and pour mixture over vegetables.  Bake in preheated 450 oven for 30 minutes, or until vegetables are tender, but not mushy.  Viola!  Spectacular, healthy meal created!
