Harpoon UFO White Barbeque Sauce

Harpoon UFO White AleBarbeque sauce – the staple of summer cooking. I grow weary of the same ole ketchup/tomato based sauces. On a day when the early morning temp was already 85, I decided to challenge myself with creating a light, unique barbeque sauce recipe deserving of the Harpoon UFO White beer. To be honest, the lightness of the Harpoon UFO White, with notes of orange & coriander (and I swear I detected a hint of banana! Some say a note of hay – I’ve personally never tasted hay!), I felt this was the perfect beer to meet this challenge. Warning: this is such a fabulous summer beer, you’ll have your own challenge to not drink several while you’re making this!

Harpoon UFO White AleHarpoon UFO White Barbeque Sauce. A light, tasty barbeque sauce for chicken or pork – try something new on your grill!

Ingredients

1 ½ cups mayonnaise

1/3 cup Harpoon UFO White (Feel free to consume the rest while making this!)

¼ cup rice vinegar

1 Tbs prepared horseradish (NOT sauce)

1 Tbs Dijon mustard

2 tsp brown sugar

2 tsp orange zest (use juice for a great quinoa or thickly slice & grill for a great garnish)

1 tsp sugar

1 tsp freshly ground pepper

1 tsp coriander

1 tsp cumin

I tsp granulated garlic

¾ tsp salt

½ tsp paprika

Chicken or pork for grilling (I used boneless, skinless chicken breasts)

Directions

Whisk all ingredients (except the meat) in a medium bowl. Refrigerate for a couple hours (or overnight) to allow all the flavors to meld. Easy, huh?  Make sure you cook meat low and slow. Brush the meat every 5 to 10 minutes, depending on the meat and the cut of the meat. Make sure you allow any meat rest before cutting into it, or you’ll lose all the fabulous juices.
